Deep Healdsburg Roots
Some stories start with a dream, but ours started with flour and a French accent. In the 1820s, Dustin's great-grandfather opened French bakeries around Healdsburg's town square. Today, those same historic buildings house Valette and The Matheson. When you visit, you'll likely spot Bob 'Pops' Valette, Dustin's dad, wandering the dining rooms with a glass of Pinot Noir in hand, sharing the stories that built this legacy.

THE JOURNEY BEGINS
The Valette story starts with a dream and determination. When Dustin's great-grandfather left France to settle in Healdsburg, California in the early 1900s, he planted roots that would grow deeper with each generation. This connection to the land isn't just history. It's the foundation of everything we serve today.
1920s
HONORÉ’S LEGACY
Honoré Valette brought his French craftsmanship to downtown Healdsburg, where his "Snowflake Bakery" stood within the footprint of what's now The Matheson and his "Home Bakery" was located on the site now occupied by Valette restaurant. His commitment to quality, and hospitality, established the enduring family values that continue to guide both restaurant and wine endeavors today.
2015
A DREAM REALIZED
Two brothers, one shared vision. When Dustin Valette and Aaron Garzini opened Valette restaurant in 2015, they created more than a dining room. They built a community of growers and producers who care as much about their craft as they do. This obsession with exceptional ingredients revealed how great wine makes great food taste even better. Ten years later, that magic still happens every night.

In 2021, Dustin restored the 110-year-old building where his great-grandfather once baked bread, transforming it into The Matheson. Our Winemakers
David Ramey
David Ramey helped pioneer the artisan winemaking techniques that define modern California whites, earning the nickname "Professor Chardonnay" from Wine Spectator for his transformative influence since the 1970s through groundbreaking methods like whole-cluster pressing, sur lie aging, and native yeast fermentations that are now industry standard. David has crafted two 100-point Chardonnays and served 26 years on the Board of Communicating for Agriculture, providing visas for foreign students to work harvest in the US while establishing his reputation as one of California's most influential winemakers who fundamentally changed how the world views American wine.
For Valette Wines: David brings traditional French techniques and modern precision to create Chardonnays that represent the absolute pinnacle of California winemaking.
Michael Browne
Michael Browne left everything behind in Seattle in 1997 with his wife, Sarah, to pursue his winemaking dream in Sonoma County, co-founding the acclaimed Kosta Browne winery, which earned Wine Spectator's Wine of the Year in 2011 and several other Top 100 placements, before launching their own celebrated labels, CIRQ and CHEV.
His meticulous approach combines technical excellence with bold innovation, making Michael one of Pinot Noir's most respected craftsmen in his field, who has crafted award-winning wines, including a coveted 100-point wine that consistently receives critical acclaim, while using their platform to mentor the next generation of winemakers and support their community.

Bob Cabral
A fourth-generation California farmer with 45 years of winemaking experience, Bob made wine history in 2010 when his 2007 Litton Estate Pinot Noir became the first North American Pinot Noir to achieve a perfect 100-point score from Wine Enthusiast Magazine. Named Wine Enthusiast's 2011 Winemaker of the Year and North Bay Business Journal's
2016 Winemaker of the Year, he has crafted over 100 wines scoring 95-100 points and been ranked more than 20 times as Artisan Winery of the Year. His legendary career includes 17 years at Williams Selyem, and beyond winemaking, he and his wife Heather have donated over $5 million to children's charities while mentoring winemakers.
For Valette Wines: Bob crafts our Pinot Noir and Rosé of Pinot Noir with four decades of expertise, bringing his legendary touch to wines that represent the pinnacle of craftsmanship.
Tom Rochioli
Tom Rochioli is a third-generation farmer and first-generation winemaker whose family has worked the same Russian River Valley vineyard since 1938. His 1985 Rochioli Pinot Noir made wine history when it was named "Best Pinot Noir in America" by Wine Spectator in 1987, establishing Rochioli as a Russian River Valley pioneer and proving California Pinot Noir could rival the world's finest. His family planted Sauvignon Blanc in 1959 and were Pinot Noir pioneers in 1968, with some of California's oldest producing Sauvignon Blanc vines still in production today. As one of California's finest wine producers, his terroir-driven wines showcase the unique characteristics of individual vineyard blocks.

Jesse Katz
Jesse Katz is the first winemaker named to Forbes 30 Under 30, Wine Enthusiast's "40 Under 40 Tastemaker," and Wine Spectator "Rising Star," having crafted 39 perfect 100-point wines from five different critics. His 2020 Aperture Del Rio Cabernet is the only wine from that vintage to receive 100 points in both Napa and Sonoma, and the first Cabernet in Alexander Valley history to achieve a perfect score. His wine collaboration set world records, with a 6L bottle selling for $1 million. Jesse has raised over $5.8 million for charities through wine auctions and serves on SommFoundation's Board of Directors.

Dustin Valette is Chef and Owner of Valette, The Matheson, Roof 106, and Valette Wines in Healdsburg, California. Growing up in great-grandfather Honoré's wine country, the Culinary Institute of America graduate honed his craft at Michelin-starred Aqua and Thomas Keller's Bouchon before spending six years as Executive Chef at Dry Creek Kitchen. In 2015, he and brother Aaron opened restaurant Valette in Honoré's bakery location, followed by The Matheson, both earning Michelin Guide recognition. Living with his wife and two children in Honoré's farmhouse, he creates inventive California cuisine with French technique and locally-sourced ingredients, collaborating with renowned winemakers to produce award-winning wines, including back-to-back 100-point Cabernet Sauvignons.

Aaron Garzini honed his hospitality expertise over a decade at John Ash & Co., the pioneer of Sonoma County wine country cuisine, before expanding his leadership skills in San Francisco at Betelnut on Union Street. He returned to his roots as restaurant manager at Francis Coppola's acclaimed Rustic Restaurant in Geyserville, leading teams in delivering impeccable service. In 2015, Aaron co-founded Valette restaurant with his brother Dustin, earning Wine Spectator Award of Excellence and Michelin Guide recognition. After successfully establishing Valette as a cornerstone of Healdsburg's dining scene, Aaron now joins Valette Wines as a partner, bringing proven expertise in creating exceptional guest experiences and deep wine country knowledge.

Michael Riel
Michael Riel brings decades of ultra-luxury wine operations experience as our COO, with leadership roles at Paul Hobbs Wines, M.A. Silva Corks USA, and Browne Family Wines. He holds degrees in economics and English, a Corporate Business Degree from Germany, plus UC Davis winemaking credentials and international certifications. Named to North Bay Business Journal's 40 Under 40 in 2012, his expertise attracts industry legends and ensures flawless execution across every aspect of our wine operations. Beyond wine, he's committed to philanthropy, conducting charity work in Nicaragua for over a decade with his wife. When Chef Valette shared his vision for creating exceptional wines, Michael's deep connections throughout Sonoma County and his operational excellence became the backbone that transforms culinary dreams into world-class bottles.

Mark Malpiede
Mark Malpiede brings 16 years of transformative experience at Williams Selyem Winery as General Manager to Valette Wines, guiding their growth in strategy, marketing, hospitality, and global sales. Moving from Boston to California in 1991, he fell in love with wine country and built his career from Constellation Brands to becoming a Williams Selyem leader. He served 8 years on Sonoma County Vintners Board and 6 years as President of their Foundation. Currently Co-Chair of Ceres Community Foundation and founding committee member of V Foundation's Sonoma Epicurean fundraiser, he transitioned to Ernest Vineyards as President in 2022, helping open their Healdsburg Square tasting room. Living in Santa Rosa with wife Christie, daughter Paloma, and dogs Lucca and Ivy, his strategic planning expertise and industry connections help open doors for Valette Wines.

Kimberly Matson
Kimberly Matson, a Healdsburg native with deep wine industry roots through Brogan Cellars and Littorai, brings passionate advocacy for sustainability, mentorship, and diversity to her Director of Operations role. Her local connections and industry expertise help shape Valette Wines' fusion of wine and culinary excellence while supporting meaningful causes including animal rescue. She champions initiatives supporting environmental stewardship, social responsibility, and community engagement, values aligned with Chef Valette's philosophy of giving back while building success. Her commitment to mentorship creates growth opportunities within the team while contributing to Sonoma County's wine community development. Kimberly's mission centers on maintaining authentic, community-focused operations that reflect quality and integrity.

Tome Escobar brings an experienced perspective to his role as Wholesale Director for Valette Wines. Driven for exploration and an unrelenting pursuit of knowledge, his goal is to make wine more approachable and the learning process exciting. At Valette, he oversees on-premise sales and distribution, connecting exceptional wines with the people and places that bring them to life.His world travels and extensive tenure in the restaurant and wine industry ensure these highly coveted wines reach the right hands and tables. Beyond wine, Tome challenges himself through the outdoors. starting a small business and educational volunteer work. As a Certified Sommelier through the Court of Master Sommeliers, he builds lasting connections between buyers and wines, sharing the complete story behind each bottle.

As a founding team member at Hello Alice for eight years, she served as Chief of Staff, leading capital raises, managing investor relationships, and driving strategic initiatives through AI-powered workflow automation. She mentors emerging female leaders and leverages her tech background to enable innovative hospitality solutions while preserving authentic guest experiences.
